- Abstract
- The author analyzes the culinary space of 11 countries of Latin America. The leading world cuisines (Italian, Japanese, Spanish and so on) and Latin-American cuisines compete in this space. The most popular Latin-American cuisines are Mexican, Peruvian, Argentinean, Brazilian. Much of Latin American countries have culinary sovereignty, because their peoples prefer their national cuisines. The author seeks to explain the features of the culinary space of Latin America. He tries to show that the natural and socio-historical aspects of Latin American societies are the key determinants of Latin American culinary
